advice from judges
Bread rolls, 6
- Rolls should be uniform in size, well risen, neat in shape and appearance
- Glazed evenly and carefully
- Rolls with ‘kissing crusts’ are acceptable, if uniform in shape and size
Sausage Rolls 5 , with homemade shortcrust pastry. each 5-6cm
- Uniform in size and colour
- Pastry join should be underneath roll
- Glaze evenly and carefully applied
- Sausage meat well flavoured and in good proportion to pastry
Victoria sandwich (given recipe)
- Both halves same thickness (may be baked in two tins)
- No cooling rack marks on top or bottom surface
- Traditional filling raspberry jam, sufficient and evenly spread
- Light sprinkling of caster sugar on the top
Meringues, 5
- Should be evenly sized and risen.
- No cream
Chocolate brownies, 6 (Men Only)
- Should be evenly sized and risen.
- If the recipe is given it should be followed!
Jar of lemon curd (maximum 350 gm)
- Use jars and lids free from brand marks.
- Fill jars right to the brim.
- Use waxed disc and cellophane cover.
Jar of fruit jelly (maximum 350 gm)
- Use jars and lids free from brand marks.
- Fill jars right to the brim.
- Use waxed disc and cellophane cover.
- Jelly should have a wobble!
Jar of fruit jam (minimum 350 gm)
- Use jars and lids free from brand marks.
- Fill jars right to the brim.
- Use waxed disc and cellophane cover.
- Jam should be clear, well set but not stiff (it should be spreadable)
- Points for distinctive fruity flavour and good colour.
Jar of orange marmalade (minimum 350 gm)
- Use jars and lids free from brand marks.
- Fill jars right to the brim. Use waxed disc and cellophane cover.
- Marmalade should be clear with peel evenly distributed throughout.
Jar of chutney/pickle – minimum 2 months old (please state spicy or sweet)
- Chutney should be thick dark and soft - a consistency acquired with long cooking time! You should be able to draw a spoon across the bottom of the pan at the end of cooking. You can’t really cook a chutney for too long.
- Leave ½” space in the top of the jar of a vinegar product.
- Do not use wax discs for vinegar-based preserves.
- Use jars with plastic-lined screw tops for these or clip-top jars with rubber seals.
Eggs, from own fowl, 6 (shown in a basket with straw)
- Eggs should be as fresh as possible
- Points for uniformity
- Blood spots are a fault
